The best cupcake recipe: EVER !

Hello my little blogsters,
Everyone is always looking for something to do on their weekend off, so I thought it would be a great idea for me to do a different kind of post today. One that families can take part in and have fun ! So here is the recipe that me & my family swear by and where you can buy it from, enjoy !
So this is the book that I got as a christmas present from my friend Jayne about 2 years ago. They still sell it on and all you have to type in is 'Cupcake recipe book hamlyn' and then you look through the books till you find the one above. It is currently selling cheapest at £2.74 in the used section, instead of the £8.10 you've got to pay to get it from the official supplier. As you can also probably see it comes with 12 multicolored silicone cupcake holders, and I know there are only nine on the picture, but there are more inside the pack.

Here's the recipe for the cupcakes:
Vanilla Cupcakes:

150g (5 oz) unsalted butter or margarine, softened
150g (5 oz) caster sugar
175g (6 oz) self-raising flour
3 eggs
1 teaspoon vanilla extract

You can also add some chocolate chips or nuts in if you want to make them less plain.

1. Line a 12-section bun tray with paper cake cases. Put all the cake ingredients in a mixing bowl and beat with a hand held electric whisk for 1-2 minutes until light and creamy. Divide the mixture evenly among the cake cases.

2. Bake in a preheated oven, 180 degrees celsius (350 fahrenheit), Gas mark 4, for 18-20 minutes (sometimes you need longer depending on how well your oven works) until risen and just firm to the touch. transfer to a wire rack to cool.

Makes 12 
Preparation time: 10 minutes
Cooking time: 18-20 minutes

Personally I think that is the easiest cupcake recipe I've ever seen !

And here is the Buttercream icing/frosting recipe to go with it !

150g (5 oz) unsalted butter, softened
250g (8 oz) icing sugar
1 teaspoon vanilla extract 
2 teaspoons hot water

1. Put the butter and icing sugar in a bowl and beat well with a wooden spoon or hand-held electric whisk until smooth and creamy.

2. Add the vanilla extract and hot water and beat again until smooth.

Makes enough for 12 cupcakes
Preparation time: 5 minutes
